Our small oak barrels (from 30 to 100 litres) have a very high exchange surface, which leads to greater oxygenation of the spirit and a more intimate contact with the wood. The evolutionary process is very intense, just think that after just one year of aging we record a loss of alcohol of around 12%. However, the part of alcohol that flies away leaves us with all its richness, what remains is a true golden quintessence.
